Just three hours from the capital, Hillcrest Merimbula, a reimagined 1970s beachside motel is the perfect out-of-office destination. Hillcrest’s retro charm doesn’t stop at the rooms - come daybreak opt for a hit of tennis on the grounds or a continental breakfast in the dining room. Grounded in nature, Merimbula is home to Short Point, where you might catch sight of a whale or two and no doubt, Australia’s shimmering Sapphire coastline.

A private island is just the beginning of this Tasmanian adventure; which might see you cooking fresh fish over an open fire, or shucking wild oysters straight from the sea - a true return to life’s simple pleasures. Framed by the D'Entrecasteaux Channel, Satellite Island has only recently been open to the public, and as such is an unspoilt paradise - a combination of native bush, sheer cliffs, rocky beaches and coves to bask in the afternoon sunlight.
