Peanut Butter & Strawberry Thickshake

Too long has the smoothie been delegated to portable breakfast category when in actuality it is the perfect breakfast in bed. Think about it; zero crumb between the sheet risk factor, no delicate balance of cutlery on propped knees, and best of all it only monopolises the use of one hand, leaving the other free for more important in bed tasks like magazine page turning or back tickling. This recipe was adapted slightly from David and Luise's of Green Kitchen Stories and seeing as I work with the peanut butter company to end all peanut butter companies, I make it far more often than I'd care to admit.
10 strawberries (or more!), chopped
Juice of one lemon or lime
Two large frozen bananas (frozen for at least overnight, don't mess around)
4 tablespoons of good peanut butter
1 cup of almond milk (or any milk, really)
1 teaspoon of good vanilla extract
A handful of ice cubes
Split the strawberries and the lime juice between two glasses and muddle them together lightly. You don't need to totally puree them, just give them a bit of a mash. Then, in a blender, combine your frozen bananas, milk, ice, vanilla and peanut butter until smooth and creamy. It should be quite thick. You're aiming for that 'need a spoon' consistency that's somewhat akin to a McFlurry that's been left out in the sun for a few minutes. Once you're there, and the banana has all been blended properly, pour the milkshake over the strawberries between the two glasses and serve immediately.
